  • Atta (Whole Wheat Flour)
  • Vegetable Oil

Directions

  1. 1Add atta to a bowl
  2. 2Add
    • 1/2 tbsp ajwain
    • 3/4 tbsp salt
    • 2 tbsp vegetable oil

      make sure you don't add too much oil, or the puri would become khasta (hard) like a kachori

  3. 3Slowly add water and knead the dough. The dough should be harder than the dough made for roti.
  4. 4Once you think the dough has reached its optimum consistency, knead it 50 more times.

    This helps develop more gluten networks, which leads to better texture.
