Atta Halwa

cook0.15 hrs·serves4

Ingredients

  • 1 cup Atta (Whole wheat flour)
  • 1 cup Desi Ghee
  • 3 cup Water

Spices

  • 1 cup sugar

Directions

Sugar Syrup

  1. 1In a saucepan combine,
    • 1 cup sugar
    • 3 cups water
  2. 2Bring the mixture to a boil, stirring until all the sugar has dissolved

Halwa

  1. 1 Heat a pan over medium-low heat
  2. 2Add 1 cup of atta, and roast it for about 7 minutes stirring regularly to avoid burning. Roast until it turns slightly brown and develops a smell.
  3. 3Add 1 cup of desi ghee to the mixture, mix well and cook for 2-3 minutes

Do not worry if the mixture looks runny at this stage. Once the sugar syrup is added, the atta will absorb the liquid and thicken to the correct consistency.

  4. 4Slowly pour the sugar syrup into the pan, while stirring continuously to prevent lumps from forming.
  5. 5Continue stirring for a few minutes until the halwa thickens and ghee starts separating from the sides
  6. 6Turn the heat off, cover the pan with a lid and let the halwa sit for 2 minutes.

This allows the remaining moisture to be absorbed in the mixture, giving the halwa a soft and rich texture.

  • Reheating is fine, but tastes best fresh.
